The term gluten has become very famous throughout the world and we are sure that you have heard of it and probably know what it does in the body.


However, do you know what gluten does to food?

Gluten is a mix of proteins that are found in wheat flour. Each wheat flour contains two proteins -gliadin and glutenin, and these proteins bind together when water is added and create “an elastic protein network” which we know as gluten.

A key feature of gluten is it’s ability to capture air and inflate like a balloon, which is why the bread rises. However, how exactly gluten acts can be a big surprise for many.
